Preheat oven to 400°F and line a baking sheet with parchment paper.
Cut each potato lengthwise into 8 wedges of similar size.
Toss wedges with olive oil in a large bowl until fully coated.
Mix garlic powder, Italian seasoning, salt, and pepper in a small bowl.
Add half the parmesan cheese to the oiled wedges, then sprinkle the seasoning mix. Toss well with your hands.
Arrange wedges skin-side down on the prepared baking sheet in a single layer with space between each piece.
Sprinkle remaining parmesan cheese on top of the wedges.
Bake for 30-35 minutes, flipping halfway through, until golden and fork-tender.
Garnish with fresh parsley if desired and serve immediately.
