Preheat oven to 400°F (200°C) and grease a standard muffin tin generously with olive oil or cooking spray.
Roll out the pizza dough into a thin rectangle on a floured surface. Cut into 6 long strips about 2 inches wide.
Spread a thin layer of marinara sauce on each strip, avoiding the very edges.
Layer halved mozzarella slices along the strip, then place pepperoni slices along the top edge so the top half of the meat hangs off the dough.
Fold the bottom half of the dough up over the cheese, leaving the pepperoni exposed. Roll the dough tightly from one end to the other.
Place the rolled roses into the muffin tin cups. Bake for 15-20 minutes until the dough is golden and cheese is bubbly.
