Ingredients
  

  • 1 box brownie mix or homemade brownies, baked and cooled
  • 1 pound fresh strawberries hulled and dried
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil or vegetable oil
  • 10 pieces wooden skewers

Method
 

  1. Prepare brownies: Bake brownies according to package directions and cool completely. Cut into 1-inch squares.
  2. Prep strawberries: Hull strawberries and pat completely dry with paper towels.
  3. Thread skewers: Alternate brownie squares, strawberries, and marshmallows on each wooden skewer, leaving handle space at the bottom.
  4. Melt chocolate: Combine chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth (about 1 minute total).
  5. Drizzle and set: Place kabobs on parchment-lined baking sheet. Drizzle melted chocolate over each kabob in a zigzag pattern.
  6. Chill: Refrigerate for 10 minutes until chocolate sets. Serve immediately or store in refrigerator up to 24 hours.

Notes

  • Brownies must be completely cool before cutting to prevent crumbling.
  • Pat strawberries bone-dry before threading for best chocolate adhesion.
  • Store finished kabobs in single layer to prevent chocolate smearing.
